Pancakes

Mix together your dry ingredients:
1 1/2 c flour
3 TB sugar
1 1/2 tsp baking powder
1/2 tsp salt

In a separate bowl mix together your wet ingredients:
1 1/2 c reconstituted powdered milk (remember, 1/3 c to 1 c water)
3 TB butter melted
2 eggs
1/2 tsp vanilla (optional, I don't usually use)

1) Make a little well in the middle of your dry ingredients and pour in the wet, then with a whisk combine all ingredients until smooth. (I don't worry about over-mixing them because I'm too paranoid about having little air pockets of dry stuff in the middle of my cooked pancakes :) so whatever)
2) Pour little batter circles onto griddle (this batter is usually thick, so spread it out gently into a circle). Flip when ready and serve when cooked to personal preference (our family likes them more on the "underdone" side) and serve with buttermilk syrup.
