To 2 cups of your favorite pancake batter add the following:
3/4 cup dried chopped carrots
1 cup dried apple slices
boiling water
1/2 tsp. ground cardamom (optional)
1 tsp. ground cinnamon.
1/2 tsp. ground ginger or 1 tablespoon grated fresh ginger
1) Place carrots in a small bowl and cover with boiling water, let stand until softened. Meanwhile, place apples in a bowl and combine with 1 cup boiling water. Mix in a blender or food processor to get applesauce. Drain the carrots and set aside in a larger bowl.
2) Mix all ingredients with the softened carrots until blended. Then add to pancake batter.
3) Cook batter on a hot skillet and serve with yogurt, maple syrup or your favorite fresh fruit, jam or jelly.
