This recipe comes from "I Dare you to Eat it" by Liesa Card
(can use Roast beef chunks, shredded with a fork, thus using only food storage items)
1 lb. ground beef
2 cups cooked wheat berries
2 cans tomato soup
1 cup diced onion
1 cup diced bell pepper
1 can diced tomatoes
1 can kidney beans
1/2 tsp paprika
1/2 tsp minced garlic
1 tsp salt
1 bay leaf
2 TB oil
*I added a small can of diced green chilies, but the original recipe does not call for it
1) (If using beef also, brown first). In a large stockpot, pour oil and bring to med-high heat. Saute onion and pepper for a few minutes until fragrant. Add remaining ingredients and simmer at least 15 minutes.
2)You can make this in a crock pot and let simmer on low.
*Optional: garnish with sour cream and cheese.
