Polish-style Lasagna

Ingredients:
9 lasagna noodles
1 onion, sliced
1/4 to 1/2 cup butter
2 2/3 cup dry potato flakes
1 (8oz) pkg cream cheese (you can use chive-and-onion flavored cream cheese)
Grated Cheddar cheese (optional, this is not in the traditional polish lasagna)

1) Cook lasagna noodles as directed and drain. Set aside on a plate still damp.
2) While lasagna noodles are cooking saute onion in butter over a skillet for 5 min.
3) Also, while noodles and onions are cooking, prepare instant mashed potato, as potato-flake-pkg directs, but omit using milk. Stir in the cream cheese, until well blended.
4) Place 3 noodles in the bottom of a greased 9x13 pan. Spread 1/2 potato mixture over the noodles. Top with 3 more noodles, then the other half of potatoes. Top with remaining 3 noodles and top those with sauteed onions. If using, finish by lightly sprinkling with cheese across the top.
5) Bake in 350 degree oven for 20 minutes, until bubbly. Allow to cool 5 min before cutting.
