Oatmeal Yeast Rolls

Ingredients:
1 1/2 cup boiling water
1/3 cup shortening
1/2 cup packed brown sugar
3/4 cup powdered milk
3-4 cups of sifted flour
1 egg, lightly beaten
1 pkg active dry yeast
1 tsp salt
1 cup oats (quick or regular)

1) Pour boiling water in a large bowl. Add shortening, brown sugar, salt, and rolled oats. Cook to lukewarm. Add egg and yeast. Add powdered milk and 2 cups flour. Beat until smooth. Add remaining flour, a little at a time, until dough can be handled.
2) Turn out onto a lightly floured pastry cloth. Knead until smooth and satiny. Place dough in buttered bowl. Cover with wax paper and clean towel. Let rise in warm place until double in bulk (about 1 hour). Punch down dough. Place on slightly floured pastry cloth. Let rest 10 min more.
3) Divide dough in half. Shape each half into 16 balls about 1 1/2 inch in diameter and place 1 inch apart in 2 well greased 8x8x2 square baking pans. Cover. Let rise until doubled.
4) Bake at 375 degrees 20-25 min or until nicely browned. Yields 32 rolls.
