Instant Mashed Potatoes

Do not microwave*
*Use more or less butter and salt as desired
*For large amounts, do not microwave. Instead heat ingredients in an 8-qt Dutch oven and whip potatoes with a whisk.
STOVE-TOP DIRECTIONS:
  1. Heat water, butter, and salt to boiling in a saucepan.
  2. Remove from heat. Stir in milk and potatoes until just moistened. Let stand about 30 seconds and whip with a fork.
MICROWAVE DIRECTIONS:
  1. Stir potatoes and salt in a microwaveable bowl until well blended. Stir in HOT water, milk, and butter until moistened.
  2. Cover with plastic wrap, folding back one side to vent steam. Microwave on High as directed in chart. Remove carefully and whip with a fork.
