You can use honey as a sweetener in place of sugar in most recipes. If your recipe calls for 1 cup of white sugar, substitute 3/4 cup of honey, and reduce the liquid in the recipe by 1/4 cup (this is necessary because honey contains water). If the recipe does not call for liquid, add 4 TBsp additional flour for every 3/4 cup honey used.
The moisture in honey will soften cookie batters. This is a favorite feature if the cookie is a soft, chewy type. If it is a crisp variety, add 4 extra TBsp of flour for every 3/4 cup used.
