Ingredients:
1/2 cup butter
1 cup sugar
1 egg
1 1/3 cup dry potato flakes
1 1/3 cup baking mix (like Bisquick)
1 tsp coconut extract
1) In a small bowl combine potato flakes and baking mix, then set aside. In a medium mixing bowl, cream together butter and sugar until smooth. Stir in the egg and coconut extract. Then mix in the potato flake mixture until well blended.
2) Drop heaping spoonfuls onto a greased cookie sheet. Bake in a 325 degree oven for 12-15 min, tops are still white and bottoms are light brown. Remove from oven and let sit on cookie sheet a few minutes before transferring them to a wire rack to finish cooling.
