This recipe comes from the book "I Dare You to Eat it" by Liesa Card
Ingredients:
1 can Spam (optional, any leftover meat is fine)
3 cups cooked cold wheat berries
3 cups cooked rice
Any combination of vegetables, leftovers work fine
4-6 green onions, thinly sliced
1/2 tsp sugar
2 TB soy sauce
1 tsp salt
1/4 tsp ground black pepper
1/4 cup oil
2 scrambled eggs (optional)
1) Dice Spam (if using) and saute until browned and crispy. Set aside.
2) If vegetables have not been cooked you may want to saute them in a little oil until tender.
3) Combine all ingredients in a pan and heat thoroughly before serving.
*The ratio of wheat and rice can be adjusted to whatever is left in your fridge.
