Wheat Berries with Brown Butter and Pecans

This dish is savory, not sweet. I was fooled by the title too.
Ingredients:
1 cup wheat berries
2 TB butter or margarine
1 medium onion, chopped
1/2 cup pecans, coarsely chopped
1/2 tsp salt
1/8 tsp ground black pepper
water
2 TB fresh parsley chopped

1) In medium bowl, soak berries overnight in enough water to cover by 2 inches. Drain in the morning.
2) In medium saucepan, combine wheat berries and 3 cups water, and heat to boiling. Reduce heat, cover, and simmer until wheat berries are tender but still firm to the bite, about 1 hour. Drain.
3) In same clean saucepan, melt butter over medium heat. Add onion and cook, stirring frequently, until tender, about 5 min. Stir in pecans, salt, and pepper. Cook, stirring, until pecans are lightly toasted and butter begins to brown, about 3 min. Stir in wheat berries and 1 TB water. Heat through. Stir in parsley. Makes 6 side-dish portions.
