Honey in Salad Dressings

Honey Apricot Dressing
1 (12oz) can apricot nectar
1/4 cup honey
1 clove minced garlic
1/3 cup veg. oil
1/2 cup raspberry vinegar
1 1/2 tsp cornstarch
1 TB toasted sesame seeds
1/4 cup minced fresh basil or 1 TB dried basil, crushed
1/8 tsp salt and 1/8 tsp pepper
1/2 tsp ground ginger
-Whisk together all ingredients, except sesame seeds, in a medium saucepan. Bring to a slow boil over medium heat. Reduce heat to low and simmer 5 minutes, stirring constantly. Cool, add sesame seeds, and refrigerate, tightly covered, up to 10 days. Excellent on both fruit and vegetable salads.

Honey PoppySeed Dressing
3/4 cup mayonnaise
1/3 cup honey
1 TB Dijon-style mustard
2 TB poppy seeds
salt and pepper to taste
-Whisk together all ingredients in a small bowl until blended. Cover and refrigerate until ready to serve.

Honey Orange Dressing
1/2 cup plain yogurt
1/4 cup honey
1/4 cup mayonaise
3/4 tsp grated orange peel
1/4 tsp dry mustard
3 TB orange juice
1 1/2 tsp vinegar
-Whisk together first 5 ingredients in a small bowl until blended. Then gradually mix in orange juice and vinegar. Cover and refrigerate until ready to serve.
