Wheat Berry Salad

Ingredients:
2 cups wheat berries (1 lb)
3 TB fresh lemon juice
1 TB olive oil
1 large shallot, minced
1 TB Dijon mustard
2 tsp honey
1 1/2 tsp salt
1/2 tsp coarsely ground black pepper
3 stalks of celery, each cut lengthwise in half, the crosswise into 1/4 inch thick slices
3/4 cup dried tart cherries, chopped
1/2 cup chopped fresh flat-leaf parsley

1) In 4 qt. saucepan, combine wheat berries and 8 cups water. Heat to boiling. Reduce heat, cover, and simmer until wheat berries are just tender, about 1 1/2 hours.
2) Meanwhile, prepare dressing. In large bowl, combine with wire whisk lemon juice, oil, shallot, mustard, honey, salt, and pepper until blended.
3) When wheat berries are cooked, drain. Add warm wheat berries, celery, cherries, and parsley to dressing in bowl. Toss until mixed and coated with dressing. Serve at room temperature, or cover and refrigerate up to 4 hours.
