Ingredients:
3/4 cup milk
1 egg
1 cup raisins
1/2 cup veg. oil
1 cup whole wheat flour
1/2 cup sugar
3 tsp baking powder
3/4 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
1 cup rolled oats
1) Preheat oven to 400 degrees. Grease or line with cupcake papers about 12 medium muffin cups (25 mini muffin cups).
2) Beat egg. Stir in milk, raisins, and oil. Sift together dry ingredients and add all at once to the first mixture. Stir just until flour is moistened. Batter will be lumpy. Fill muffin cups about 3/4 full.
3) Bake until golden brown, about 20 min (10-12 min for mini muffins). Remove from pan immediately and let cool on wire rack.
