1 cup flour
1.2 cup raisins, coarsely chopped
3 TB brown sugar
1/2 tsp cinnamon
1/3 cup margarine or butter
1 cup quick-cooking oats
1 1/2 tsp baking powder
1 beaten eggs
1/4 cup milk
1/4 cup currants or mini chocolate chips (optional)
1) In a bowl combine flour, sugar, baking powder, and cinnamon. Cut in marg/butter until mixture resembles coarse crumbs. Stir in oats and raisins, currants, or choc. chips. Combine egg and milk and then add to the flour mixture. Stir until just moistened (will be sticky).
2) On a lightly floured surface, pat dough into a 7 inch circle. Cut into 12 wedges. Place on a greased baking sheet and brush with milk. Bake at 400 degrees for 10-12 min or until light brown.
